When Alfred and Pauline Rogers set up their flour mill on their North Okanagan farm in the 1950's, who would have guessed that one day it would be possible to have a machine in our kitchens capable of producing a loaf of bread from start to finish at the touch of a button! Now, bread machines have made fresh, home-baked bread a reality for everyone, even for those who couldn't find the time or had never baked bread before in their lives.
It was about ten years ago that we began to receive calls from consumers asking for bread flour for their new automatic bread machines. As
the popularity of bread machines grew, so did the demand for a flour which would consistently produce good results in the machines. Our response was the formulation of Rogers Bread Flour for White Bread and for Whole Wheat Bread - both blends of hard red spring wheat flour and gluten.
Your many letters and phone calls asking for bread machine recipes inspired us to do some experimenting with recipe ideas. In developing these recipes, we have baked hundreds of loaves of bread, had our share of disasters and gained a lot of expertise in the process. The result is this exciting collection of recipes we are delighted to share with you. All of these recipes have been tested in 1 pound, 1 1/2 pound and 2 pound machines. They include a wide variety of breads from the healthy and substantial whole grain loaves to rich and decadent sticky buns. Look for interesting rye breads and savoury breads, some with ethnic flavour combinations. You'll find recipes for bagels, english muffins and pita breads, all easy to make with the help of your bread machine.
Baking bread involves chemistry which means a few simple rules have to be followed.
