Cranberry Apple Cake

…the great thing about this delicious, festive cake recipe? It makes two! Perfect for busy holidays when lots of family and friends are around. You can halve the ingredients if you wish to make just one (use 2 eggs and 1/3 cup of dried cranberries).


3 cups Rogers All Purpose Flour
1 1/2 cups sugar
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 cup honey
1 cup vegetable oil
3 eggs
1 tsp vanilla
3 cups peeled, cored and diced apples
1 cup chopped walnuts
3/4 cup dried cranberries
icing sugar, optional


Preheat oven to 325 degrees F. In a large bowl, combine flour, sugar, baking soda, salt and cinnamon and set aside.

Beat together honey, oil, eggs and vanilla until well blended. Add this mixture to the dry ingredients and beat until smooth. Stir in apples, walnuts and cranberries.

Spread evenly in 2 greased 8″ (2L) square cake pans. Bake 55-60 minutes or until tester comes out clean. Sprinkle with icing sugar, if desired.

YIELD: 2 cakes.
