Preheat oven to 375F (190C).

 

Combine flours, baking powder, baking soda, cinnamon and salt, stir well; set aside. Beat together egg, buttermilk, oil and brown sugar: stir in apple. Add dry ingredients to liquids all at once and stir just until ingredients are blended.

 

Spoon into prepared muffin tins. Bake 20-25 minutes or until tops are lightly browned.

 

*1 cup(250 mL) milk with 1 tbsp.(15 mL) lemon juice may be substituted for 1 cup(250 mL) buttermilk.

 

YIELD:  12 cakes
