Polka Dot Peanut Butter Cookies

. . . almost like a peanut butter shortbread.

1 1/4 cupsROGERS NO ADDITIVE / ALL PURPOSE FLOUR300 mL
1 1/4 cupsROGERS LARGE FLAKE OATS300 mL
1 tsp.baking powder5 mL
1/2 tsp.baking soda2 mL
1/2 tsp.salt2 mL
3/4 cupbutter or margarine175 mL
1/2 cuppeanut butter125 mL
3/4 cupbrown sugar175 mL
1 egg1
1 tsp.vanilla5 mL
1 cupchocolate chips250 mL

 

Preheat oven to 375°F (190°C).

Combine ROGERS NO ADDITIVE/ALL PURPOSE FLOUR, ROGERS LARGE FLAKE OATS, baking powder, baking soda, and salt; set aside.

Cream together butter, peanut butter and brown sugar. Beat in egg and vanilla. Add dry ingredients and mix well. Stir in chocolate chips. Drop by teaspoon onto greased cookie sheet and flatten with a fork. Bake for about 10 minutes.

 

YIELD: about 30 - 35 cookies.
