Oat Bran Raisin Scones

. . . delicious with a hint of orange, these scones are quick and easy to make.

1 3/4 cupsROGERS NO ADDITIVE / ALL PURPOSE FLOUR425 mL
1 cupROGERS OAT BRAN250 mL
1/4 cupsugar50 mL
1 tbsp.baking powder15 mL
1/2 tsp.salt2 mL
1/2 cupraisins125 mL
2/3 cupbutter or margarine, chilled150 mL
1 egg1
1/2 cupmilk125 mL
1 tbsp.grated orange rind15 mL
1 tbsp.milk15 mL
2 tsp.sugar10 mL

 

Preheat oven to 400°F (200°C).

Combine ROGER NO ADDITIVE/ALL PURPOSE FLOUR, ROGERS OAT BRAN, sugar, baking powder, salt and raisins. Cut in chilled butter until mixture resembles coarse crumbs. Set aside.

Beat egg. Add milk and orange rind. Add liquids to dry ingredients all at once. Stir lightly with a fork until moistened. Knead 10 times.

Pat dough into two circles about 3/4" (2 cm) thick on greased baking sheet. Brush tops with milk and sprinkle lightly with sugar. Score each circle into 6 wedges.

Bake on upper rack in oven for 15 minutes. Serve warm with butter.

 

YIELD: 12 scones.
