Dad's Oat Bran Cookies

…spicy and chewy.

3/4 cupsugar175 mL
1/4 cupbrown sugar50 mL
1 egg1
2 tbsp.molasses25 mL
1 tsp.vanilla5 mL
1 1/2 cupROGERS NO ADDITIVE / ALL PURPOSE FLOUR375 mL
1 cupROGERS LARGE FLAKE OATS250 mL
3/4 cupROGERS OAT BRAN175 mL
1 cupcoconut250 mL
1 tsp.baking soda5 mL
1 tsp.baking powder5 mL
1 1/2 tsp.cinnamon7 mL
1 tsp.nutmeg5 mL
1 tsp.allspice5 mL

 

Preheat oven to 325°F (160°C).

Cream butter, add sugars; cream together until light and fluffy. Add egg, molasses and vanilla. Beat well. In a separate bowl mix all the dry ingredients together.

Add the dry ingredients to the butter mixture and combine well. Form dough into 1" (2.5 cm) balls and place on an ungreased baking sheet. Flatten with a floured fork to 1/4" (5 mm) thickness.

Bake 15 minutes. Remove from oven, allow to sit on sheet 1 - 2 minutes and then transfer to cooling rack.

 

YIELD: 60 cookies
