9 Grain Muffins

. . . a nice textured muffin with the added fibre of 9 grains.

1 cupmilk250 mL
1 tbsp.lemon juice15 mL
1 1/4 cupsROGERS 9 GRAIN300 mL
1 egg1
1/2 cupvegetable oil125 mL
1/2 cupbrown sugar125 mL
1 cupROGERS NO ADDITIVE / ALL PURPOSE FLOUR250 mL
1 tsp.baking powder5 mL
1/2 tsp.baking soda2 mL
1/2 tsp.cinnamon2 mL
1/4 tsp.salt1 mL
1/2 cupraisins125 mL

 

In a large bowl, combine milk, lemon juice and ROGERS 9 GRAIN and let stand for 1 hour.

Preheat oven to 400°F (200°C).

Add egg, oil and brown sugar to 9 grain mixture and beat well.

Combine ROGERS NO ADDITIVE/ALL PURPOSE FLOUR, baking powder, baking soda, cinnamon, salt and raisins and stir well. Add dry ingredients to liquids, stirring just until blended.

Spoon into prepared muffin cups and bake 15 - 20 minutes.

 

YIELD: 12 muffins.
