Mexican 9 Grain Muffins

. . . use your favourite salsa to make these as hot as you like.

2 cupsROGERS 9 GRAIN500 mL
1 cupsalsa250 mL
1 1/2 cupsmilk375 mL
2 eggs2
1 cupvegetable oil250 mL
1/4 cupsugar50 mL
1 cupgrated cheddar cheese250 mL
4 tsp.chopped fresh cilantro20 mL
2 tbsp.chopped green chillies25 mL
3 cupsROGERS NO ADDITIVE / ALL PURPOSE FLOUR750 mL
1/4 cupcornmeal50 mL
2 tbsp.baking powder25 mL
1/2 tsp.salt2 mL

 

Combine ROGERS 9 GRAIN, salsa and milk; let stand 1 hour.

Preheat oven to 375°F (190°C). Combine eggs, oil, sugar, cheese, cilantro and green chillies; add to the ROGERS 9 GRAIN mixture.

Combine ROGERS NO ADDITIVE/ALL PURPOSE FLOUR, cornmeal, baking powder and salt; stir well. Add to the first mixture and stir just until blended.

Spoon into prepared muffin cups. Bake for 15 - 20 minutes.

 

YIELD: 18 muffins.
