9 Grain Buns

1 tbsp.dry active yeast15 mL
1 1/2 cupswarm water375 mL
2 tbsp.honey25 mL
1/4 cupvegetable oil50 mL
1 tbsp.lemon juice15 mL
2 tsp.salt10 mL
1 cupROGERS 9 GRAIN250 mL
3 1/2 - 4 cupsROGERS NO ADDITIVE / ALL PURPOSE FLOUR875 - 1000 mL

2 tsp.water10 mL
1 cupROGERS 9 GRAIN, for coating250 mL

 

Dissolve 1 tsp. (5 mL) honey and yeast in 1/2 cup (125 mL) lukewarm water and let stand 10 minutes.

Measure 1 1/2 cups (375 mL) warm water into a large mixing bowl; add 2 tbsp. (25 mL) honey, vegetable oil, lemon juice and salt. Add yeast mixture and mix well. Stir in 1 cup (250 mL) 9 Grain and enough flour to make a soft, workable dough.

Turn dough out onto lightly floured surface and knead 10 - 15 minutes until dough is smooth and elastic. Form dough into a ball and place in greased bowl, turning once to grease top.

Cover and let rise 50 minutes or until doubled.

Punch down dough. Cut into pieces the size of an egg. Form into oval-shaped rolls.

Combine egg and 2 tsp. (10 mL) water and brush on rolls. Roll in 9 Grain to coat the rolls. Place 2" ( 5 cm) apart on greased baking sheets. Cover and let rise 20 minutes or until doubled.

Bake in 375°F (190°C) oven for 15 - 20 minutes or until done. Remove to wire racks to cool.

 

YIELD: 20 - 24 buns.
