Summer Snowballs

. . . it's winter in July with this cool crunchy creation!

2 cupsyour favourite ice cream500 mL
1 cup ROGERS HAZELNUTS & HONEY 5 GRAIN GRANOLA250 mL
4maraschino cherries4
1/4 cuppeanut butter50 mL
2/3 cupchocolate chips150 mL

 

Using an ice cream scoop make four balls of ice cream. Put the ROGERS GRAIN GRANOLA in a bowl. Roll each ice cream ball in the granola until completely coated.

Put each ice cream on a serving dish and return to freezer.

Just before serving, prepare topping. Microwave the peanut butter and chocolate chips together in a small bowl on HIGH for 1 1/2 minutes or until the chocolate chips are melted. Stir well.

To serve, drizzle chocolate topping over the ice cream balls. Garnish with a cherry.

 

YIELD: 4 servings.
