Crispy Christmas Eve Cookies

. . . these crisp cookies are perfect for the holiday season. Excellent to leave with a glass of milk for that special visitor who enters through the chimney!

3/4 cup butter or margarine, softened175 mL
3/4 cupbrown sugar175 mL

1 tsp.vanilla5 mL
1 1/2 cupsROGERS NO ADDITIVE / ALL PURPOSE FLOUR375 mL
1 1/2 cupsROGERS OAT BRAN375 mL
1 tsp.baking soda5 mL
1/2 tsp.salt2 mL
1/4 tsp.nutmeg1 mL

 

Preheat oven to 350°F (180°C).

Cream butter and sugar until light and fluffy. Beat in egg and vanilla.

In a separate bowl, combine ROGERS NO ADDITIVE / ALL PURPOSE FLOUR, ROGERS OAT BRAN, soda, salt and nutmeg.

Add to the butter mixture. Beat until well blended.

Drop by teaspoon onto a baking sheet and flatten with a fork. Bake for 8 - 12 minutes or until golden. Leave cookies on sheet for 2 minutes before placing on cooling racks.

 

YIELD: 40 - 50 2" cookies.
