In a non-stick skillet, melt butter over medium heat; cook onion, stirring until softened.
Stir in ROGERS PORRIDGE OATS & ANCIENT GRAINS and cook, stirring for 1 minute. Stir in raisins, apricots and stock; cover and simmer over low heat for 15 minutes or until liquid is absorbed. Stir in parsley (if using); season with salt and pepper to taste.
The fruit and grain pilaf can be kept in an airtight container in the fridge for 2 days and in the freezer for up to 4 months.
