#TryItWithRogers: No Bake Coconut Acai Macaroons

Welcome to the first installment of the #TryItWithRogers series. We get so inspired seeing so many fun, easy recipes come across our desk, especially when we can make them using our products to deliver amazing results. For our first recipe, we chose these No Bake Coconut Macaroons from the Naturally, Delicious cook book by Danny Seo. The entire recipe takes 15 minutes to make, and delivers delicious (and healthy) treats for any time of day.

For this recipe, we have subbed out the GF rolled oats for our Ancient Grains Blend Porridge Oats.

First, you start off with 2/3 cup Rogers Porridge Oats Ancient Grains in the food processor.

Grind the oats until they resemble a flour-like texture. This is a great thing to note for any recipe where you need the oats to be a finer consistency.

Then add the coconut, maple syrup, coconut oil, acai powder (we used the Navitas brand), vanilla and salt.

And pulse to combine.

Once you’ve reached your desired consistency, scoop out the dough by heaping tablespoons (or use your trusty cookie scoop) and form into balls.

Line your rolled balls onto a parchment lined baking sheet and refrigerate for 30 minutes.

Keep them stored in an airtight container in the fridge for up to 3 days!


INGREDIENTS

2/3 cup ROGERS PORRIDGE OATS & ANCIENT GRAINS

1 cup unsweetened shredded coconut

1/2 cup organic maple syrup

2 tablespoons coconut oil, melted

2 tablespoons acai powder

1 teaspoon vanilla extract

1/4 teaspoon salt

DIRECTIONS

Line a baking sheet with parchment paper.

In a food processor, grind the porridge oats to a flour-like texture. Add the coconut, maple syrup, coconut oil, acai powder, vanilla, and salt; pulse to combine.

Scoop out heaping tablespoons of the dough and roll into balls. Place on baking sheet and refrigerate until firm, about 30 minutes.
