It’s that time of year again, when weeknight meals can be hectic, especially with the back-to-school schedule. Keeping it straightforward and delicious for supper while thinking about tomorrow’s lunch can help meal prep today and avoid kitchen chaos tomorrow.
Oats are a simple, smart ingredient for healthy lunch and supper ideas the entire family will love, making it easier to get back into a routine. Jane Dummer, registered dietitian, explains, “People are increasingly recognizing that oats are great-tasting, high-fibre, whole grains. Oats may help you feel full because when they’re consumed in a meal the food leaves the stomach at a slower rate due to the viscosity of the soluble fibres. Be sure to include a mixture of fibres from a number of foods including oats, vegetables, fruits, seeds and other grains to ensure the many health benefits.”

We all need some simple hacks this time of year, especially when the same old tired sandwiches are staring us down. Why not make your lunches from delicious weeknight leftovers. We are featuring two supper recipes: 1) Taco Bowl with Savoury Porridge Oats & Ancient Grains and 2) Sweet Potato, Apple and Turkey Bake that can be enjoyed many times over for school and work lunches.
1) Supper Tonight, Lunch Tomorrow
This quick and easy taco bowl with savoury porridge oats & ancient grains and saucy beans can easily transition into a lunchbox for the next day. Use low-sodium vegetable broth and it becomes a vegetarian option.
After the family has enjoyed it for supper with their favourite toppings like avocado, lettuce and Greek yogurt, store any leftover savoury grains and saucy beans in sealed containers in the refrigerator. The next day, simply scoop the leftovers onto a tortilla, wrap and enjoy it warm or cold for lunch.
Get the older kids in the kitchen to help cook the savoury grains and saucy beans at the same time.
2) Make Ahead with Leftovers for Lunch
Not only does this casserole have an impressive nutritional profile, but it provides energy to keep you feeling satisfied for longer. Made with porridge oats & healthy grains, have it with a spinach salad topped with sunflower seeds for supper.
For lunch, simply reheat (or enjoy the casserole cold!) and serve alongside sliced cucumbers and tomatoes. For a completely new lunch, just heat and serve the casserole as a topping for a baked potato or spread a few scoops over a tortilla to make a trouble-free wrap when you’re short on time.
Cut vegetables and apples into uniform pieces for even and efficient cooking, and have everything chopped before you start to cook the broth and onions.
