Directions
Preheat oven to 350°F (175°C).
Cream butter, sugars, egg and vanilla.
In a separate bowl combine flour, ancient grains cereal, salt, baking soda and coconut.
Add the dry ingredients and mix well.
Chill about ½ hour. It is important to chill batter so cookies don’t spread. Roll into 1” balls.
Make an indent with thumb and add a scant amount of jam of your choice (1/4 tsp.) to the
indent.
