Directions
Preheat oven to 375 degrees F. Prepare muffin tins by lining with paper cups or spraying with non-stick spray.
Add buttermilk to oat bran and let stand. Combine flour, baking powder, baking soda and salt; set aside. Beat vegetable oil, egg, sugar and vanilla together. Add buttermilk-bran mixture to liquids and stir well. Add dry ingredients all at once and stir until just combined. Gently stir in blueberries.
Spoon batter into prepared muffin tins. Bake 20-25 minutes, until tops are golden.
*Buttermilk substitute: Measure 1 1/2 tbsp lemon juice or vinegar into a 2-cup glass measuring cup, and top up with milk to the 1 1/2 cup mark.
