Preheat oven to 350F. Line 11″ x 17″ sheet pan with parchment paper.
In medium bowl, combine fruitcake mix, coconut and raisins. In another medium bowl, combine the flour, baking powder and salt.
In a large bowl, cream butter and sugar until creamy. Add eggs and extracts and beat well.
Stir in dry ingredients until blended then stir in fruit mixture.
Spread mixture evenly in pan. Bake for 35 minutes, or until golden brown on top and cake tester inserted in the centre comes out clean. Do not over-bake.
Makes 54 x 2″ bars or 72 x 1 1/2″ bars
