Ingredients:
1 1/4 cups Rogers All Purpose Flour
1 cup Rogers Oat Bran
1/2 tsp cinnamon
2/3 cup sugar
2 tsp baking powder
1/2 tsp salt
1/3 cup vegetable oil
2 eggs
1 cup banana (mashed)
2 tbsp lemon juice
3/4 cup BC Blueberries (fresh or frozen)
CINNAMON SUGAR:
1/4 tsp cinnamon
1/4 cup sugar
Directions:
Preheat oven to 350 °F (175 °C).
Combine Rogers All Purpose Flour , oat Bran, cinnamon, sugar, baking powder and salt.
Add vegetable oil, eggs, banana and lemon juice. Do not overmix.
Mix together the ¼ cup of sugar and ¼ tsp cinnamon.Toss BC Blueberries in ½ the cinnamon sugar, keeping the rest to sprinkle on top of the loaf. Gently fold in blueberries.
Pour batter into a greased 2L (9” x 5”) loaf pan. Sprinkle with cinnamon sugar and bake for about 1 hour or until tester comes out clean. Cool 15 minutes before removing from pan.
Yield: 1 loaf
